Rye Whiskey

With the three chamber still’s historic relationship to rye whiskey, we will be producing our own version with a slightly-modified, historic 1911 mash bill.

Triticale Whiskey

We’ve got plans for another whiskey made from the heirloom rye-wheat hybrid, triticale. To our knowledge, a triticale whiskey has never been produced on a three chamber still. That said, the grain’s characteristics (i.e., it combines the spiciness of rye along with wheat’s sweetness) makes it a perfect choice.

Old Tom Gin

A twist on the pre-Prohibition style of gin. Made from 100% triticale. More details to come…

Rum

There is also a oft-ignored tradition of distilling rum on three chamber stills. Yet we’re aiming to nudge three chamber rum back into the spotlight. Keep an eye out for our revival of this tradition with offerings of both white rum and golden rum, produced with American turbinado cane sugar and molasses from Louisiana.

Aquavit

Our aquavit represents so much of who we are and what we do. We first chose this spirit because of our Scandinavian heritage (that’s right, we consume lutefisk, lefsa, and aquavit every Christmas). But we felt compelled to put our own innovative twist on it. Hence, whereas many aquavits are made from rye, ours is 100% triticale . It is double distilled on our gin still.
